Bruschetta “Maria Costanza” are creamy inventions by Mrs. Bosco, founder of the Graco company, and are based on fresh vegetables, nuts, fish and imagination. They are key ingredients to prepare sandwiches, canapés, and to be smeared on slices of toasted homemade bread. They are also great for pasta and rice salads.

Processing method: handmade , with the use of slices of in oil tuna, salted anchovies and pitted olives “Peranzana” in brine.

Phases: the tuna steaks are carefully drained from the oil conservation. The desalted anchovies are reduced in filets and mixed with tuna, desalted olives, and capers; the mixture is seasoned with extra virgin olive oil and spices, chopped coarsely for a few minutes in vacuum cutter so that the product is not oxided. The resulting “bruschetta” cream is packed with an automatic dispenser and pasteurized in a steam autoclave.

Ingredients: olives, in oil tuna, extra virgin olive oil, capers, salted anchovies, vinegar, salt, garlic.

Use: ideal for fillings crostini, bruschettas and sandwiches. It’s a great quick seasoning for spaghetti, just by adding a bit of cooking water for pasta.

Expiration: 24 months

Control method: through chemical and microbiological analysis, carried out by an accredited laboratory by the Ministry.
