Another specialty of production boasted by GRACO is the extravirgin olive oil “COLLI DAUNI-DENOCCIOLATO” (PITTED) which is always obtained from the treatment of Peranzana olives, but without the kernels.
Thanks to this process a sublime product is reached, with sweet and harmonious taste, fruity, light and delicate, with hints of artichoke and celery, which leaves a very balanced sensation of slightly bitter and spicy. It is an oil suitable for all uses in the kitchen and especially to flavor  cold fish dishes, carpaccio, steamed vegetables and salads.

Olive: Peranzana without kernel

Extraction system: continuous cycle combined with pitter

Colour: golden yellow with green highlights

Bouquet: powerful and refined, with elegant fruity notes of green tomato, apple and banana, enriched with spicy notes of basil, mint and parsley.

Taste: large and strong, with vegetal flavor of chicory, beans, celery and almonds. Bitterness and pungency are very balanced.

Gastronomic directions: great with marinated tuna, vegetable salads, grilled vegetables, farro soup, pasta with shellfish, grilled fish, white meat roast and medium-aged cheeses.

Expiration: 24 months from the date of bottling.

Control method: through chemical and microbiological analysis, carried out by an accredited laboratory by the Ministry.
